Paul "Pauly" Graves
Pauly Graves has served as the welcoming face of the bar at Gemini Bistro, a neighborhood gem in Chicago's Lincoln Park, since the restaurant opened its doors in 2009. He keeps his cocktail philosophy rooted in the classics, but every recipe twist has a little story associated with it—from The Heater, a spicy margarita he originally started making for a member of law enforcement who frequents the restaurant; or The Squirtsky, his house made version of a citrusy vodka drink friend and Owner Ryan O'Donnell used to serve up at parties.

Billy Lawless
Born and raised in Galway, Ireland, Billy Lawless comes from a family long immersed in the hospitality industry. He moved to Chicago in 1997 and since this time has established a collection of restaurants known as Gage Hospitality Group (GHG) comprising Acanto, Coda di Volpe, The Dawson, and The Gage. GHG’s restaurants each have their own personality featuring rustic yet refined fare, skillfully curated and crafted libations, thoughtfully designed spaces to encourage conversation and conviviality and superb hospitality.

Gray McNally
Although McNally was always interested in culinary arts, it wasn’t until after graduating with honors from St. Andrews University in Scotland with a master’s degree in Economics and International Relations that he decided to pursue his dream of becoming a chef. Upon returning to his hometown of Chicago in 2002, Chef McNally graduated from Le Cordon Bleu’s Culinary Arts program before gaining experience at nationally recognized, award-winning restaurants including Spiaggia, BOKA, one sixtyblue and Ria at the former Elysian Hotel. After many years helming kitchens across Chicago, Gray discovered a new passion: farming.

Glenn Keefer
In 1969, Glenn Keefer started his restaurant career as a busboy in Amityville, NY. He took a brief detour to work as a commercial fisherman on an offshore lobster boat to pay for college tuition. But after he survived the sinking of his ship 30 miles off the coast of Montauk Point, NY, Keefer decided it was better to sell the fish in a restaurant than to catch it. Some 50 years later that decision has served him well with numerous award-winning restaurants, accolades and industry policy-changing achievements on his resume. This spring, Keefer brings his extensive restaurant experience and knowledge to Wilmette’s Sophia Steak, a new neighborhood steakhouse scheduled to open spring 2020.

POMEROY
Sarah & Kerry Wood
Kerry and Sarah Wood met in Chicago in their early 20's when Kerry was just starting his 15 year MLB career with the Chicago Cubs. With a strong commitment to Chicago, the couple wanted to give back to the city that gave so much to Kerry. In 2011, they formed the Wood Family Foundation and built an after-school mentoring program, Pitch In, for 4th-8th grade students. Their program serves hundreds of CPS students in some of Chicago’s most underserved communities.
